What’s the easiest way to fill these many, many holes in the wall?

As in the title really.

Heavens knows what the last owners were up to.

Is it just a case of getting stuck in with the Pollyfilla?

yes, polyfilla would be fine.

Yes. I’d use a plastering trowel type thing so you can sort of skim the filler over the holes quickly.

And then a light sand.

I find pollyfiller too hard. I use a cheaper, softer filler in a tub. Or get the wall skimmed by a plasterer. I reckon filing would be quicker than getting a plasterer to quote!

I use this, expensive but really easy to use and fills holes and cracks better than the traditional stuff. Also dries faster than most other options. Stays fresh in the pot if you keep it properly shut, just stir it up before use. Sands beautifully to a very smooth surface, even on old soft plaster. Just use a nice flat scraper to fill, leave and then sand gently. Sometimes can look shiny under a first coat of paint, but in my experience, so do others, and that disappears on a second coat. filler

Just have it reskimmed. Plastering will look so much better than loads of filler all over the place.
