Lath and plaster walls

We have recently bought an Edwardian house which needs a full renovation. We're having all the ceilings taken down as they are lath and plaster, cracked and won't stand up to cables being chased through them during rewiring.
All the walls also appear to be lath and plaster. Ideally we'd get them stripped back and replaced with plasterboard. Can anyone advise if this is the right course of action- and how much it is likely to cost per room (London)? Are there any other options?

I don't know if it's the right thing to do, but if I had the money I would knock it back to brick and start again, especially if you are getting a rewire.

We just re skimmed some of our rooms over the lath and plaster and whilst it looks ok, it has cracked.

There was a shortage of plaster and plasterboard last year that knocked up the cost but just doing a skim on one room and replacing the ceiling cost us £1000. Room approx 14x16ft

Bear in mind that old lime plaster is thick and heavy, which means it is good for muffling noise.

I don't have the relative figures to hand, but if replacing with plasterboard, I'd go for a double layer each side, skimmed with finish plaster, and dense mineral wool batts in the void.

Install plenty of electrical sockets at modern height, with plastic conduit between them to make future alterations easy without having to hack the wall about. Include any other wiring such as alarms, LAN, speakers, TV and even phones.
