Kitchen re firb knocking tiny kitchen and small dining room together

Last room to be done and excited.
The tiny 1960 kitchen is old and awful, knocking out stuff wall and making bigger kitchen dinner.
I'm not sure to keep original cooker potion but have an island and seating or Chang whole layout and put an L SHAPE kitchen in where dining room will be.
The rooms north facing so I want to keep it as light as possible and I'm a keen cook so need workspace.
It's 3.8 width approx and about 5 mth in length so not huge knocked through.

I wouldn't put in an island in a small kitchen - if the gap between island and surrounding units is less than about 90cm it will feel cramped and people will get in each others way. 100cm.is better. With a 3.8m width that would mean a tiny island, not really worth doing, or compromising on walkway space around it, which you will grow to hate.

Moving the position of the cooker isn't a big deal. Likewise taps/water points all easy to move. Start with a blank sheet of paper and the dimensions of the space with no preconceptions of what goes where. The important thing to think about is your walking route around the kitchen as you fetch ingredients from fridge and larder and pans and plates from cupboards when cooking, from table to dishwasher/sink after eating, and your routes to take items from draining board/dishwasher back to cupboards - in a good kitchen layout these routes are efficient and comfortable, and don't cross over each other too much (so ome person can be unstacking the dishwasher while another cooks, without getting in each others way too much) so if the room is L shaped make sure you have a layout that wont lead to you having to walk between the two spokes of the L multiple times during every day tasks. Think about where the kettle, toaster and microwave are going to be - close enough together that ome person can easily use all 3 to prepare an "I can't be arsed" meal, but not so close that person A making a cup of tea is blocking the way of person B sorting out baked beans on toast.

Keeping the kitchen in the old kitchen will probably be cheaper from a plumbing point of view.

Lots of variations on this around our area. Essentially keep the kitchen where it is but put a peninsula where the wall was, this gives you a nice big worktop and a bit of extra storage, as long as you still have room for a table on the dining side. (I wouldn't bother with perching stools in a small room).
