Non yellowing high gloss varnish

Hi, I'm looking at making my own worktops for a vintage kitchen and need a really good non-yellowing clear high gloss varnish to finish them. Can anyone recommend anything please? I'm not keen on doing a resin pour, I just need something that doesn't discolour and protects from moisture...? Any suggestions gratefully received!

water-based Diamond varnish doesn't yellow. I like the floor varnish which is very durable. Use a clear, untinted one or the final finish will be patchy (depending on film thickness) and the grain obscured.

btw high gloss varnish is disparigingly referred to as "toffee apple finish."

Satin looks less like plastic.

if you want to colour it, you can use a spirit-based wood dye before varnishing, to hide any natural yellowness that pine and similar woods have

There are a number of brands, bur Wilko have good ones.

Also Rustins, Blackfriar etc

I formerly used Colron, but retailers mostly carry their water-based "refined" range now which I think is not as good. I have not used Liberon but they have a good reputation. For speed, you can apply them with a barely-moist soft paintbrush. Must be fully dry before varnishing, and rub off any excess.
