My budget is around £250,000 and would like minimum 1 acre and 3 bedrooms - does such a place exist? I've looked in the Highlands and yes it does seem possible, but does anyone know of other places where I might get such a thing? Thanks.

If you look at North Wales once you get a couple of miles inland or over an hour commute to Deeside / Liverpool etc houses are excellent value.
If you want to learn the Language lots of help is available, its the first Language in many areas so well worth knowing the basics. I have tried and its hard as it would be my third, but so much easier off you live there and use it on a regular basis.

A tip, if you use zoopla rather than rightmove you can add the keyword 'acre' which helps narrow to properties with land.

If you want to search in Northern Ireland I’d suggest using the Property Pal website.
