Can you put Danish oil over the top of water-based varnish?

I would like to have my interior oak-veneered doors oil-finished with a clear oil, like Danish oil. However, Howdens insist that you must use water-based or solvent-based primer/stain/varnish to avoid lifting the veneer. I am wondering whether I can use this as an undercoat and seal the doors, then use oil on top for a cosmetic finish?

I don't think it would work - oil needs to soak into the top layer of wood. What is the cosmetic effect you are looking for? You can get water based varnish in gloss, satin and matte finishes. Oils are available in different finishes too - we have satin finish on our worktops.
