Can anyone please advise on how to disconnect the old tap please? Hoping we don't have to cut the pipe..

Do you see the slot headed screw below where the tap pipe is connected? That's an isolator so you can turn the a water off before it reaches the tap. Turn the tap on then turn that screw clockwise with a screwdriver until the water stops. Then you can unscrew the tap pipe.

Once you have connected your new tap and turned it on, you can repeat the process and turn the screw on the isolator back to where it was.

Thank you! Where do I unscrew the tap pipe though? I would have thought the silver ring just above the copper pipe but that's smooth round not hexagonal (octagonal?)

The tap pipe unscrews above the white plastic(?) bit just above the short length of pipe above the isolator - the hexagonal part is what you need to unscrew. If you hold the bit of pipe above the isolator with one hand you should be able to unscrew the hexagonal connector by hand. It might need a spanner to loosen it if it's really tight.

Just realised my directions could be confusing: unscrew the part directly above the white plastic thing. That's where the tap connector is screwed on. If you try anywhere higher up you won't get anywhere and you'll find that moves freely anyway but doesn't unscrew anything.

might be an idea to turn the water off first, and have some WD40 to hand to loosen the screw.
