From gas to induction hob - anyone regret it?

Sorry me again!
As the subject says, currently have gas hob and LOVE it but thinking of induction in new house (currently renovating) for ease of cleaning and sleek look.
BUT I am so worried that I will regret it so please give me your experiences!

I think it's worth spending a decent amount on it. They're a huge difference between my Bosch one and my friend's Ikea one.

Went from Gas for my entire life, to induction hob - including hob top kettle. Loved it!

Went back to gas in a 6 month rental, I thought it would be great - easier to control the simmering. Hated every day of it.

Was thrilled to be back with induction again!!!!

I've been planning to get the aeg one which has 4 induction zones and one wok burner.

Do those of you with induction use woks to cook? Do they work? What about casserole dishes do they work ? Does anyone have any thoughts on this set up ?

I have a Neff induction hob (8 years old and still going strong) and love it - I'd never go back to gas, too fiddly to clean.

I love my IKEA one :) I think its 5 or 6 yrs ago. Responsive and (most importantly) so easy to clean. It looks as new now and no fiddly gas bits to take off and clean.

dynevoran, I have 4 induction rings and one gas wok burner, specifically for stir-fries Grin , but I really only use it for the one pan I've kept from the previous kitchen which is not compatible with induction hobs.
I have an induction compatible wok pan and it's great.

Fanella, there's something not right with your induction hob if it does not heat things up properly.

One of things that 'sold' ours to me was the demonstration in the sales room how quickly it heated 2 litres of tap-cold water to boiling Shock

You can buy inductions with spaces that allow different sized pans. Half our hob is for specific sized pans but the other half has an adjustable section so you can put two smaller pans or one huge one on it.

Dame Even high quality stainless steel pans, if they don't take a magnet, won't work on an induction hob.
Mine are/were Barazzoni, and a wedding present (sob!).

I like induction for speed of boiling water, ease of cleaning, safety factor, look in the kitchen, and ours has a handy "answer the door" function which switches all the burners to keep warm by pressing one button.

I dislike the fact I can't use my cast iron, my preserving pan, or the pan from inside the slow cooker.

dyne - I have an AEG stand alone cooker with an induction hob. I cook with a wok easily - in fact , I don't even do it on full, it gets so hot
I wonder about the difference. My DD has just got a new kitchen with a Neff induction hob, and it's absolute pants in comparison to mine.

We have a really cheap one (salesperson said there wasnt a lot of difference) although had been willing to spend more. Its fantastic. Love it sooo much.

And relieved we didnt spend more!

Love love love our induction hob - on our second now.

BUT

Not all things are equal with induction- you really do get what you pay for.

We have a Siemens hon and it's brill - 5 rings, touch control. You also need really good pans - the cheap induction pans are v slow and won't get as hot.

Interesting responses, just curious why professional kitchens don't use them if they are so good. Anyone care to enlighten me?

Professional kitchens do use them - the Ritz kitchens had a huge makeover a few years back and swapped over to all induction (their copper pans are now used to decorate the kitchen walls). In fact every professional kitchen that's been newly set up that I know (and I know a lot) has put in induction. Cheaper to run, easier to clean and a lot lot less heat which makes a big difference in professional kitchens. I know a beautiful kitchen in a Chinese restaurant that has banks of the curved wok induction hobs and it looks amazing.

My husband is a chef and he was adamant he didn't want induction in our home kitchen (he's always worked with gas) - but I managed to persuade him. He is now a huge convert and won't ever be going back to gas.

You can get rubbish induction hobs though - lower power hobs are cheaper but they wouldn't cope with having all four rings on boost at the same time.

I miss my induction hob as have gas now. We moved into a new house and asked for induction and they said no. The gas is a pain to clean and as I was used to induction have forgotten to switch it off a couple of times (only for an hour or so but still not safe). I also find the gas too hot when I want really low heats for stuff like white sauce or a gentle simmer.

Professional kitchens do use them, I was in a Michelin star kitchen recently and they had a beautiful induction hob, so beautiful I was salivating.

We changed from gas to induction over 3 years ago. LOVE it.

To try it before we fully committed we bought a 2 ring Andrew James £70 cheap as chips portable induction from Amazon to see us through the kitchen extension.

I completely agree with Olly that you get what you pay for. Mine is a De Dietrich one which allows you to bridge two zones. It was £850 Shock but worth every penny and doesn't drop power from the zones the more you use.

We have Circulon frying/saute pans and a fairly cheap Ikea pasta pan and saucepan. All work beautifully.

It is easy to control and clean. And they use them on Great British Bake Off Grin

Induction hobs do not generate heat
And they are quicker to adjust than gas ... because there is no residual heat in them.

If a pan boils over you lift it up, wipe the hob with a cloth and put it back down..

Induction is wonderful

surabayajenny just seen you've asked which hob we have. It's a Siemens one; 90cm with 5 zones. We had it when our kitchen was put in but to buy it costs around £950.

We have an Electrolux Platinum induction hob and would never go back. Brings liquids to the boil quickly, easy to control (if something is boiling over it literally takes 2 seconds for it to go down) and easy to clean.

The only bad things are that you have to buy ferrous pans and they are noisy.

TalkinPeace They do generate a small amount of heat; the pan transfers it to the hob after it gets hot.
