Are wood worktops a bad idea?

I'm planning a new kitchen as part of an open plan extension. I love the whole ivory shaker look, i know it's not to everyone's taste but I have my heart set on it. Would oak worktops be a huge mistake?I think they look so beautiful and DH is willing to oil and sand as necessary. We're pretty careful with hot pans but I'm concerned about the area around the sink. Any advice would be much appreciatedSmile .

before my worktops went in they had 3 coats of danish oil on every single surface (sides, bottom, top, back front)
from then on its been olive oil
last winter they got their first sand and linseed oil
and olive oil when needed

so long as the oils are plant based, you can mix and match (I know because of Mum's 40 year old ones)

Bog standard Ikea carcasses - the island is in fact 4 wall units back to back
Doors were one that had a finger hold so did not need handles : not sure they still do it
