Installing quartz worktops - what happens before they are fitted?

We are shortly going to have our kitchen ripped out and replaced from scratch. We will be having quartz worktops, but there will be a two week gap between templating and installation of the worktops.
Can anyone tell me what usually happens during this gap? I'm concerned about not having a kitchen sink and working space; is it normal to put something temporary in? Or should we just assume the kitchen is broadly out of action for this time?

As well as the worktops which will be removed from the kitchen, we do have a 'spare' section of laminate which we could press into action if it is any help.
If you've had granite or quartz installed, what did you do?!

Some kitchen companies will install temporary MDF tops in the intervening period but there is obviously a cost associated with this. Others (ourselves included) do not offer this service but our jobs are turned around in 5 working days. On request we will put in temporary tops but it could easily be £150 for a plumber to set it up and then return to disconnect before worktop fitting, a cost most clients arent willing to bear.

You say you don't need the sink plumbed in.

If the kitchen units are in place, you could buy a piece of laminated worktop from a DIY shed (it is very cheap but heavy) and just lie it on top of the units to give you a working surface.

KM -thanks, that's what I assumed.
PJ - thanks also - actually it's the sink I'm concerned about!! We do have a spare section of kitchen laminate in good condition which we could lay in place and use as a working area. We might also be able to get our dishwasher working in time (not sure whether it is dead at the moment). However, it seems we won't have a sink.
We have a tiny sink in the cloakroom next door. I guess we just fill a washing up bowl and get on with it. Or just buy a stack of paper plates and freezer food??
Just wondered if this was normal during kitchen installation and what people have done to put up with it.
