What's snagging? When does it happen?

And how's it different from just jobs to be done to complete build?
I'd be grateful for input, please. We're nearing the end (thank The Lord!!!) of a big build and there are some things still to be done like some plumbing and second fix woodwork but also a million little jobs. Are the million little jobs snagging and do they all need to be done before final payment to the builder? It seems the last payment is quite small really and although I trust our builder, I'm fearful that the last bits will go very slowly as there might be a bigger incentive to get onto the next big, new job.
What are your experiences of the closing days and weeks?

It's odds and sods that need fixing, re-doing, changing or finishing off at the end of a project.

And we wait until all is done before giving final payment? I think we're a way off from a snagging list yet, by the sounds of it. Just lots of jobs that need doing!

Once the contractor thinks they have done everything on the scope of works then you inspect together and identify odds and ends which need finishing off or you aren't happy with. Done just before final payment is due.

It's all the stuff you notice AFTER the builder has left the site and stated he has completed the job. I would get him to do all the stuff you know about now and still retain a proportion of his fee over the coming months. We released our last payment staggered 3 and 6 months after the build finished - we were doing a whole house refurb.

So when eg: the walls start to show a crack or two, you realise that the lights are wired to the wrong switch or whatever you still have some hold over him to come back and fix it.

I'm slightly dreading the difficult conversation coming when my builder presents me with his final invoice for our loft conversion and I present him with the list of things not yet done...

Our final payment is quite small too, and I'm not sure it would actually cover the things which they're proposing to leave until later (bannisters and fixing my fucked up first floor ceilings for example).
