I've had literally hundreds of wetrooms fitted on my projects over my career, of those approximately 1 in 70 will have a small leak which is picked up and corrected at snagging stage.
Correctly fitted they are harder to do than a big standard bathroom but they have advantages. I predominately have installed them in areas needing accessibility or for the elderly, no trip hazard, easier to get in and the bathrooms can be more compact giving bigger bedrooms. They have less corners & edges to attract accumulating limescale & soapscum.
Designed well they don't need to soak your toilet or toilet roll but badly they almost definitely will.
Your builder/plumber is unwilling because it's outside his comfort zone and therefore I would agree he is not the person to do it. Talk to him about a flush tray system(there are loads of them) or an alternative installer.

We have semi wet rooms - sort of 1/3 of bathroom partitioned by fractionally lowered floor and then glass partially screening shower area. The floor behind the screen slopes a mm or two towards the drain so no mopping of floors.
We have concrete floors though which probably makes a big difference

Curlyhairedassasin. Thank you Grin

I love them. The tiles for each bathroom are an exact match so it looks even more seamless than a tiled wetroom floor because its one piece.
No grout lines to clean either.

And dead easy to install.

Because I had a wet room in our previous house, I actually had a quote for that last year when I ended up installing these limestone trays instead.

Having the limestone trays saved me about £2500 per bathroom.

You'd save more if you can buy a standard size tray as its cheaper than bespoke..
