What is the received wisdom re splashbacks with a chimney extractor, but no wall units

Along one wall in our kitchen, going from left to right we will have larder units where we will keep small appliance, then a run of base unit pan drawers in which the hob will sit, then two tall oven housings where we will have 2 x eye level single ovens with a cupboard above each.

My dilemma is that I didnt want wall cupboards joining the larder units to the oven housing (clean lines). We will have a large chimney extractor over the hob, so seemingly floating in the middle. As a minimum we could have a short upstand above the worksurface (matching), or we could take it all the way up to the bottom of the chimney hood, or we could have a stainless steel or glass splashback under the chimney hood.

What set up works best - both practically and aesthetically??

I think you need more than just an upstand behind the hob. You need something that goes all the way to the extractor in that area as things will splash.

I would probably have just upstand for the area either side of the hob, then a glass or stainless steel panel behind the hob going all the way up to the extractor hood.

Yeah I think you are right about needing more protection behind the hob. I think what you suggest is the most straightforward solution but wondering whether I've missed any options. For example, is it feasible to tile that whole wall so it looks like the extractor has been installed on top of a wall of tiles? Or should I avoid tiles altogether (had glass mosaic splashback in last kitchen. Looked beautiful but nightmare to keep clean)
