Bay windows to French Doors thoughts?

I'm looking to turn this Bay Outside , Bay Outside 2 , Bay Inside Into french doors.
My thoughts are rebuilding the whole structure in wood, with french doors on the bottom, wood cladding in the middle and wood windows at the top.
I'm thinking of stretching to hardwood.
Unfortunately Bi-Fold will be too expensive and personally believe those work better for larger wide flat openings.
I'm thinking of matching the wood on the doors to the cladding.

So questions (I realise these are mostly personal style ones, but..)
Hardwood or software?
Paint or varnish?
Has anyone come across wood windows/doors that are built up with wood inside, insulation in the middle and plastic/metal outer for longevity?
Also anyone got any good photos of similar
And of course any alternative ideas, as open to all thoughts at this early stage

p.s. have already seen plenty of window guys and builders already who say yep all possible, but not great for ideas, just pricing.

Forgot to add the details.
I'll be taking out all the brick work and have windows to the floor.

The floor will be sanded and varnished with a light finish.
The room is part of an l shaped kitchen diner (when finished), with contemporary wood burner and non fussy, matt white kitchen with pale corian work tops (if my ideas don't change, which they keep doing)

I'd be more concerned about that wide crack in the upper storey of the bay. Is the bay slipping?

What is the cracking. If the bay lintel has failed or there is movement you cannot rebuild in only wood. Get a structural engineer to look at it

That's just the render, which I've now taken off.
There is no bay lintel, it's built around and on the window frames (Seems to have been the style back then).

Anway, but replacing upper and lower woodwork, windows and in between it will all be going so what's there at the moment isn't of concern.

Sorry to be thick, are you keeping it as a bay but with french doors and retaining the two side windows or getting rid of the bay altogether top and bottom or keeping top bay? Confused

I have a french door bay in my lounge, but I have 4 windows, 2 on the side and one window either side of the french doors.

The major concern for me was blinds/curtains, what would I put on the french doors as they would be open a lot (access to the garden for the children) and I didn't want blinds flapping in the wind or ceiling fix blinds. So I went for perfect fit roller blinds, just so you know. My friend has horizontal venetian and they get tangled in the wind.

Are you planning on changing the other windows in your house? Surely the french doors have to match in so if you are changing your windows you will need to think about what you are changing them to and match in with that,

it sounds like yours as similar to how mine will be.
Sides, large glass to the ground, two small glass panels either sides of the door, top glass panel (as too high for doors) and 2 doors.

Completely forgot about curtains, I think as you say rollers will be best, running from the top, though may have a look at blinds.

I'm not too bothered about all the windows matching on the whole house, though as they will be wooden frames, they should end up looking similar.
On the front I have curving bays, 5 sections with leaded windows in the top, which are a different style the those at the back.
I'll try to match up the back top and bottom and front top and bottom.

Quick additional questions
French doors opening inside or out?

Outside
Pro's More room inside
Con's even if tied back, could be affected/damaged by wind
Inside
Pro's don't have to worry about wind
Con's takes up space

Thoughts?
