How to seal a pine dining table

I have acquired a second hand chunky style pine dining table that has previously been waxed so it doesn't wipe down that well (2DC's under 4Grin). It's a bit warped on the top so I'm planning to sand it down to level it out a bit and then re-seal it. The question is what with? Do I wax it again or oil it or something else. Can anyone recommend a particular product for wooden tables?

We have tried wax and varnish, with limited success. We now have a sanded table that I leave un-treated. I scrub with Cif occasionally. When it gets bad, I re-sand. I like it to look a bit rough and ready, and got fed up with cloths, coasters etc.
There is probably a brilliant product out there, but I have never found it!

Osmo coat is quite good but you have to keep applying it or a few coats of matt varnish protects the wood.
