Autocorrect tried to change that to canny, could be worse! 😂

I'm hoping that I may get a fair load of tomatoes this year. Any canning hints and tips?

There is a really good group on Facebook called Preserving and Canning UK

Brilliant, thank you. 👍

I would love a MN canning thread!

I have been canning for about two years. I follow the instructions on my All American canner To The Letter.
My big thing to can is turkey mince chilli. Mainly because it's something we'd all eat. I also had a glut of tomatoes and made lovely passata.

I have one of the instant pot pressure cookers, can you can in them?

No , it's not the same thing. Cool item, though.

bluefoxmug · 11/05/2020 06:22

we use glas jars (the kind pasta sauce comes in)
usually courgettes and tomatos are in a glut together, I make mixes veg sauces and then preserve them in the jar.

have never preserved anything with meat.

IndecentFeminist · 11/05/2020 07:31

I was going to ask about jars, can recycled ones stand up to the pressure etc or do I need specific ones?

so far I haven't had issues.
I inspect the jars before using, any chip or crack or 'blindness' and they are out.

bellinisurge · 11/05/2020 07:48

I reuse pasta sauce/jam jars for water bath canning only. I have a bunch of Ball type jars with two part lids for pressure canning. I reuse them but not the lids themselves- apart from the screw band (which I reuse).
Just a bit nervy of reusing pasta sauce jars etc. Understand why others choose to

bluefoxmug · 11/05/2020 07:54

tbh we use them up quite quickly - by christmas the latest

BanKittenHeels · 11/05/2020 10:47

Isn’t pressure canning incredibly dangerous without the correct equipment - especially regards meat?

We pickle a lot of food and make chutneys using kilner jars (I’ve just stocked up on lots more and have ordered lots of vinegars) but we don’t can anything as we don’t have one of those pressure canners like @bellinisurge

bellinisurge · 11/05/2020 10:52

There's a whole thing about water bath canning meat instead of pressure canning. I'm too chicken to do that.
I would make a joke here about ugly chicken but that's a pressure canning joke and probably only funny to me anyway Grin

I have a pressure canner, I was lucky enough to get a Graniteware brand one on amazon uk a few years back. It's great for when i get too many veggies from the garden, or for if I've got stuff in the fridge but it'll go off before I've time to use it.
I've not done meat, but then I don't eat it anyway, or the ugly chicken Grin
I think I'd be scared water bath that too though, if I did. I've water bathed other stuff.
I've never reused jars, i also use the Ball mason 2 part lids type.
I also have the instant pot but as pp said, it's generally considered unsafe to use that as you will not get a high enough pressured heat for safe canning.
I heard they may make new ones with this feature but that may just be bad hearsay.
