Ideas like keusteaz pancake mix

Sorry I can't credit the person who I pinched this idea from as it was a while ago, I just know it was in this section.

With current events including adverse weather I think it's sensible to make sure you have provisions to tide you over especially with young kids. I have a tendency to go overboard when I get an idea in my head so I thought it would be best to restrict myself or come up with a few simple options so I don't get overwhelmed

So for breakfasts- usual cereal/toast until bread and milk run out then on to the pancakes!

Lunch - tinned soups

Dinner- pasta chopped tomatoes tomato purée

Not the most exciting but would get me by should we run into anything but wondered if there are other little gems like the pancake mix I have overlooked?

I am also well stocked on toilet roll and calpol etc.

I just keep a bag of flour, to bake cakes/biscuits/bread, make pancake mix, and for various other uses.

Pancake mix is easy - chuck a bunch of flour (I know there are recipes for exact quantities online) into a bowl with a pinch of salt and a teaspoon of baking soda. Add a teaspoon of sugar if desired.
I usually add an egg, but have made them without that.

Then add enough milk or buttermilk, stirring gently, to make it liquid enough for pancakes.

A tip from 1 recipe I have is to add a tablespoon of melted butter to the mix, to help it not stick to the pan.

Let it settle for an hour if possible, keeps well for at least 5 days in the fridge.

You can make it interesting over those days by adding chocolate chips one morning, blueberries another, Nutella and sliced banana another, grated apple, etc.

But far cheaper, and more versatile, to have the ingredients rather than a pre-packaged mix.

Idahoan mash potato packets, just add water and much nicer than smash.

Lidl do vacuum packed rosti's as part of their Alps range which are very nice, just tear open, squeeze into pan and fry for a lovely dinner side.

Tinned sliced mushrooms, great for adding bulk, flavour and texture to other dishes.

Things I picked up (probably from here)

We go through a bag of that pancake mix every 3 months.

Tesco does huge bottles of thin bleach for 90p.

Part baked rolls and baguettes are delicious and keep well - Homebargains tend to have them cheap.

@BiddyPop thanks, I always make my own pancake mix and am a keen baker, this is more to stick in the cupboard for a rainy day should we not have fresh ingredients like milk

@TorysSuckRevokeArticle50 Just add water mash is the type of thing I'm looking for thank-you. Things I can have in and not need to rely on other fresh ingredients to make

Suggest having a look in the so-called Indian section of the supermarket. Lots of just add water or vacuum sealed stuff.
Also, in Sainsburys there is a delicious (relatively speaking) potato and bacon vacuum sealed thing which just needs frying up. Not as good as doing that from scratch but still good.

Staples in our house oats, rice, pasta and potatoes. Probably in that order to.

Breakfast this morning was oat pancakes (oats, egg, milk, dash of salt, ginger and cinnamon) then dry fried.

"She who should be obeyed" has honey on hers, but then she is strange and puts sugar on porridge too

I second the idahoan mash, delicious! I find the 'plain' buttery mash is the best. I like the herb and the garlic one but just plain is more versatile, I have garlic powder and herbs in stock all the time if I want to add them to the mash.
I have tried the potato and bacon vacuum sealed thing and I can't even get them to crisp up properly! I have tried cooking in smaller batches rather than the whole thing but just can't seem to get it right! Any tips?
You can get just a water (and cook on hob) flavoured rice too, they are all right. Also I have tinned powdered milk, just add water then treat like milk (rather than just adding to tea like my great aunt used too, yuch!) tastes like uht milk, so a bit sweet but fine for cereal or cooking with but not just drinking. (in my opinion) takes up far less space than cartons of uht for the volume of milk too.
Where have you got just add water pancake mix from? Sound like a great back up plan.

My tip for the potato and bacon thing (as with most things involving those delicious ingredients when I cook them Grin) is fry fry and then fry some more. Obviously better to make from scratch but needs must.

@sexesam I got the pancake mix from amazon - it's huge but gets glowing reviews and I like the thought of it stashed away!
