I've opened and tried a few dried things now (and actually like them which is amazing for me as I have a very limited diet).

Just wondering what the best way is of storing them now - keep the bags clipped closed? Airproof jar or plastic box? Decant into smaller air proof plastic bags?

(Sorry if this a stupidly obvious thing for everyone else by the way - I usually stick to the exact same foods and am just worried about managing to ruin these!)

Jar with screw top probably, that seems air tight.

You can buy cheap food safe oxygen absorbers.
If you can decant stuff into glass jars that's a good option. They sell big clip lid glass jars at IKEA and often in supermarkets if you don't have any.
I have a massive stash of jars of various sizes that I have collected over the years (curry sauce, that kind of thing) - I wash them out , dry them, stick a piece of kitchen towel in them and then save them for reuse. When I'm actually going to use them I give them another hot wash first. For jam making etc, I always sterilise them first but for storing stuff it's generally, hot wash, dry, stick item in with an oxygen absorber. Close back up. When using the contents I try to keep the jar as closed up as possible between scooping stuff out. Saves the oxygen absorber.

Thank you both, that's great - will go and find some good jars Smile

Also, once in an airtight jar (best to label with contents, best before date & any instructions on making up if required or stick info in jar), store in a COOL DARK location.
Warmth & exposure to light decrease the storage time.
