what exactly is covered in "deli meat"?

I have been told not to eat deli meat but am confused as to what exactly it covers, I can maybe live without parma ham and salami (although will break soon I'm sure) but salt beef too, no chance.

Anything that hasn't been cooked:

? Meat and meat products - it's fine to eat meat, but make sure it is cooked thoroughly and there are no pink or red bits and that the juices run clear, especially if it's cooked on a barbecue, or as part of a ready meal. Cured meat products, such as Parma ham and salami, also carry a risk and are best avoided.

Taken from this page

I also don't tend to eat meats that are open on super market deli counters as I'm fussy about temperature control, cross contamination of cooked / cured meats and also flies etc, but I'm a bit OTT!

Not sure that really helps though?

Oh, and this page tells you why you shouldn't eat it, which always helps IMO.

thanks, just googled it and says it is simmered for 3.5 hours, to me that means cooked and so can eat it.
