... but how?? It's ALLLLL I want to eat, so how do I get around the whole raw egg hollendaise sauce thing? Can you buy it in the shops, as I've not seen it here (I live in Luxembourg). Or does anyone know a cheats recipe which combines crispy bacon, soft buttered muffins and poached eggs with a different oozy sauce to make me happy and fat?

Have you thought about a bacon and egg mcmuffin? Based on eggs benedict, apparently...

You need reliable eggs. The raw egg thing is just to do with salmonella which only a few eggs have. Apparently in the UK if they have the Lion mark they are ok - perhaps it's time for you to do a bit of research into Luxembourger (is that a word?) egg production?

Hm, if Maccy Ds had kept the sausage egg mc Muffin, then that's be ok, but I want to oozy creamyness of a proper eggs benedict. This is despite the fact that I've never actually eaten it properly, just made it once myself and clearly added too much vinegar to the sauce.. Hmm, I had assumed ALL eggs were off the cards, just like in choc mousse.. OK, I'll have to look into Luxembourish eggs then. I take it there are no other shortcuts then. Drat

Packet hollandaise sauce, in every supermarket here, don't know if you can get it in Lux though?
Plus you can coddle the eggs to raise the temp to a point that would kill any nasties.

I'm a big fan of eggs benedict too .. I use the packet Hollandaise sauces .. over here Knorr do a great one that is in a foil packet - you simply pour and heat - job done

Hi all, so is it relatively safe to eat coddled/baked eggs? Obv assuming Lion stamped etc. Have a bit of a yearning for a soft yolk but my husband isn't too keen - thinks it isn't worth the risk...

I am actually more concerned about listeria if anything (no that I would want salmonella!) as I think that only has flu-like symptoms but can cause real problems with the baby, which you wouldn't find out about until the birth.

KingsRoadie - We have our own hens and eat their eggs - they are free range chickens and they eggs are not pasturised etc. Doctor said it was absolutely fine as long as they are cooked well - no runny bits or uncooked use.

I poach them sometimes on toast for breakfast (or Eggs Benedict) but cook them well - not as nice with no runny bits but hey ho.. only for another few months..

Eggs: safest when eaten within 3 weeks of laying, hence every lion-marked egg has a date of 3 weeks on it. [caveat on next bit - I'm a hoarder of useless info, but it has a tendency to get muddled between my ears and my brain and then between my brain and my mouth, but fwiw... ] After 3 weeks the yolk membrane starts to break down, providing a food source for the salmonella bacteria which live (when they are present) in the albumen. Once the yolky products provide the food source, the salmonella start dividing like mad, giving a bacterial load large enough to cause illness in susceptible types like us when the whites are still runny and not cooked to a sufficiently high temp (75C) to kill them. There is, to the best of my knowledge - and I haven't enough money to be sued - no danger in eating runny yolks because there ain't be no bacteria in the yolk.

It sounds like I know what I'm talking about though, doesn't it?

Do you get Thomy hollandaise sauce in Luxembourg? The ready made stuff. If not, you can get in Germany. It is good.

Triggerhappy does that mean if the eggs are very fresh (say a couple of days) they are almost certain to be safe even if not Lion marked and not well cooked?

We are getting some lovely fresh eggs from a friend of dh's at the moment and it's killing me not being able to eat them softboiled.

kathy i couldn't swear to it. However if it was me I was have no concerns with eating a fresh egg with a runny yolk (not a runny white because that is so yak it makes me want to run crying to my mother). Mind, I have the constitution of an ox.

So do I triggerhappybaby - am NEVER sick to my stomach from food (unless stomach virus and I v rarely get those) - probs from growing up abroad...

i keep trying to tell this to husband but he keeps saying it;s not worth the risk and then I got cross with him so he said I could if I really wanted to (I don't have to ask his permission btw but just wanted his opinion which I usually disregard!)
