From your list I'd choose Oliver and Mabel. I'd definitely use the full names on the birth certificate.

My son is called Gil or Gilly 90% of the time but his official name is Gilbert. This way if he decides in the future that he'd rather be Bertie or Bert or just full Gilbert then he has that option.
