Healthy lunch ideas for at work?

Hi everyone

I just wanted to ideas as I'm getting bored of my lunches.

I'm not fussy but I'd like something I can prepare within 15 mins in the evening as I'm often too tired at the moment and anything longer puts me off making it, luckily for me DH finishes work earlier than me so does most of the evening meals.

I'm a sucker for "can't be bothered" to make lunch so pop to greggs or Tesco for something quick on my lunch however I would like to be healthier in pregnancy.

Any ideas would be great.

Do you have access to a fridge/ microwave/ kettle/ toaster?
I either make crust less quiches to have with veg sticks or if I’m feeling lazy I take the vegan stew pots from Aldi.

Yes - if you have a fridge, I do at work. and I plan my food for about 3 days, go to supermarket and get bag of salad, tomatoes, feta cheese or ham, bag of microwave rice. Then just assemble at work at lunchtine.

Not sure if you can do this or not but avoids actually making something in advance.

Can you over cook on evenings and heat up at work if you've got access to a microwave. Also home made soups still.

Leftovers are lush. A million times better than any prepackaged stuff.

Get over that stumbling block and work lunch gets much easier 🙂

I love making varied lunches but I have a few that are my go-to's. All are quick to prepare as I have limited time in an evening as I don't get home from work until late and start early.

Few ideas

  • chicken salad wrap/sandwich on whole meal (roast chicken, avocado, tomato etc) or if you prefer not to have meat then chickpeas with a bit of mayo is lovely!
  • quinoa salad (quinoa with feta/halloumi, tomatoes, cucumber, bit of olive oil and any salad/roasted veg you want)
  • roasted broccoli and cauliflower soup (roast broccoli and cauliflower then add to veg stock with onions and garlic and blitz) takes about 30 mins but that's baking time with minimal effort
  • avocado, feta, tomatoes on toasted bagel

I don't like pre packaged stuff as such, we don't eat microwave meals etc but I often don't fancy what I had for dinner for lunch the day after.

Thank you! Those are lovely idea @Sarahlouise86 definitely going to make the soup at the weekend and can freeze in batches and take a buttered roll with me. Yum!

I have a wholemeal pitta, ham, spinach and mixed salad with half a sliced avocado and a bit of mayo for tomorrow and a yoghurt too, just trying to stay as healthy as possible.

I usually take soup. Put it in one of those microwaveable mugs with the handle and it doesn’t get boring because you can take a different flavour each day. Also I’ve been enjoying sliced pitta with hummus, carrot and pepper sticks. Sometimes something simple like crumpets with marmite or bagels and cream cheese.

I get microwave jacket potatoes and just make a little cheese/tuna/ham/egg salad. I just take the potato out of the freezer in the morning and foil it and put it in the fridge, by lunch time it's still frozen and dinner takes 4 minutes to microwave and put together in work ☺️

Make a big cous cous salad! Just add boiling water to cous cous and boil some chickpeas then add them for protein. Add whatever veg you like. I add roasted aubergine and courgette along with chopped pepper, avocado and olives. A bowl lasts a week and it probably takes about 20 minutes to put together. It's very tasty, cheap and healthy 😊

I make a big pot of veg and chorizo soup using chicken stock the beginning of the week, portion and freeze it and then take to work to microwave, usually have it with a cream cheese onion bagel, which come in handy bags of 5 ;D

I was also going to say jacket potatoes. I also ate alot of philidelphia at the beginning, with crusty rolls or bread sticks and veg as it was relatively plain for my queasy stomach.

Pretty much what everyone has said!

  • soups which you can freeze
  • sandwiches / wraps / salads / pastas
  • leftovers if there's anything you fancy
  • mug shots / pasta n sauce are quick and easy

Or take in a variety of things into work that you can leave in the fridge so you can make something that you fancy - a big tub of pasta and ham / chicken / cheese!

Just make sure to write your name on it because work food has a habit of disappearing lol 😂
