Gestational Diabetes when you're a fussy eater!

Just been diagnosed with Gestational diabetes 👎🏼 haven't had any appointments through yet but have started reading up on the best things to eat to keep blood sugars in check.
I'm worried I'm going to fail miserably because I'm a bit of a fussy eater - sounds like eggs are good but I don't eat them (or much of any dairy) and since being pregnant I've gone off meat.
I obviously want to do the best for my baby so I don't want to go the other way and hardly eat anything because I'm scared of spiking my blood sugars!
Anyone else had this problem?

Yep, I had this in my first pregnancy and am about to have the test in my second. Not a big dairy fan myself, although the dietician recommended a cup of sugar free hot chocolate daily. It meant I got a glass of milk and also staved off my chocolate cravings. The brand I buy here (overseas) is Avalanche - it's made with stevia and didn't cause any spikes. I used to have it at 3pm just after my post-lunch prick test to space it all out just in case.

The thing to remember is that an excess of carbs (particularly white carbs) can have just as bad if not worse effect on your sugars than sweet treats. I used to have things like avocado on brown toast, Lo-sugar baked beans on brown toast, or a nice big salad with maybe some homemade pita chips on the side, etc. But I never went off meat (proper carnivore here and a homemade chicken salad sandwich was my usual go-to) so I'm not sure what else to suggest there if you're not a fan of eggs either - tofu perhaps? Someone more knowledgeable will be along soon!
