wondered the same thing as i ate it for the second time on holiday last week

you do cook it after all, but it doesn't cook for long

I haven't heard anything that says you can't.
The only thing I really avoided when pg was...sea food.

would have thought its ok as eggs are cooked (not still runny)

there are two ways of making it, so it depends how it's made

If it's done in a bain marie in the oven, then the eggs should be fully cooked & okay

If it's done on the stove top & then left to "set", the yolks are stirred in at the last minute, so there is a slight risk they may not be fully cooked.

You should probsbly be okay, especially if the eggs have the lion mark & are therefore salmonella free.
