Well I have anyway. If it's thoroughly cooked and piping hot throughout as they say in food hygiene guides

I have read that you can, but can't remember where. Makes sense really.

For soft cheeses like Brie I was told to do so only if I had cooked it myself and could guarantee that it had been boiling hot throughout - ie not gently cooked like say a custard might be. Hard unpasteurised cheeses like Parmesan would be fine even uncooked, as long as they had been stored properly. But, as ever, it's all conjecture anyway because nobody has been feeding pg women bits of raw/simmered/hardboiled cheese and seeing whether they get sick!

Yes. Listeria very vulnerable to heat. ALl hard cheeses OK, pasteurised or not, eg parmesan, hard goat's cheddar.

Thanks. All sounds logical! I have some yummy dolcelatte that I was planning on making into a tart. I guess the mould doesn't make any difference?
