batch cookers...what are you making?

Looking for some easy meal suggestions for some fussy eaters!

Also pretty much all of my pregnancy i have gone off meat...for anyone else that went off any foods...did you enjoy it again afterwards?

Something I do is make a huge batch of mince (could be quorn or whatever if not a fan of meat!) with onion, a load of chopped veg, lentils, oats and stock, really bulking it out. Take out one third, add frozen peas, top with mash for a cottage pie. Add tomatoes to the remaining 2/3, then split in half. Add Italian herbs and tomato puree to one half, making a bolognese sauce, and to the final third add beans and chilli powder, and boiled rice for a fully-ready meal.

As an alternative, I layer the sauce with sliced sweet potato instead of topping with mash, or make polenta dumplings to drop into it instead of having with pasta. I freeze in portions for two, in ziplocs and takeaway containers.

DH makes his sandwiches for the week in one go and freezes individually. He puts a frozen one in his lunchbox each morning and says that by lunchtime they are perfect to eat.

For the dauphinoise, you cook it, cool it then freeze it. I cook and freeze in an enamel tin but you could transfer it to Tupperware after cooking. Once frozen Just defrost overnight then cook again. You are only reheating it so I do it for about 30 mins

Just made sweet potato enchiladas for dinner. Made a huge batch so have 6 to go in freezer.

Normally make it with chorizo but it makes me vom just now, so it's been replaced by kidney beans and some left over broccoli for colour Grin smells good though.

Also prepping a meat loaf for freezer. Will cook and cool it then divide into 3 chunks as it's enough for 6 people.

First attempt at an enchilada sauce on the hob just now. Hope it works!

comeagain how did you get on with your batch cook fest?

I'm preparing for my big shop and also going to hit Aldi / Lidl for the veg, tinned toms and other bits and pieces before going to the local butcher for beef mince, lamb mince and hopefully deboned chicken thighs...

I've got Delia out the cupboard and about to start preparing the list. V excited!

It went well thanks for asking now got 4 huge portions so of meatloaf that will feed 2 each. Plus 6 enchiladas and one tiny pot of sauce.

The enchiladas worked well except for the broccoli but I'm a wuss and only eat it in soup

Oh I luv Delia. Her Yorkshire pud recipe never fails me! Grin

It's something I've always been slightly intrigued by but never made! Do you need a sauce with it or how do you serve it?

babyblabber it's a hairy dieters recipe. The 2nd book I think. I will dig it out tomorrow. too comfy on couch to move I'm sorry

We have it with mash potatoes and greens and a tomato sauce. But I might make gravy next time Smile

I've bought boneless chicken thighs from Aldis today (for the first time). Can't remember whether they were £2.49 or £3,49 but if their steak is anything to go by I'm going to be very happy. £15 shop today in Aldis and tenner in Tesco including wine and that's our weekly shop (we so have lots in the freezer and cupboard mind you!)

Ohh thanks Olivia - I've lots of Lidls nearby but will go the extra few miles to find an Aldi with Chicken thighs. Especially if they are boneless!
