Can I eat brie if it's cooked?

For months now I've been craving all the cheeses I'm not allowed. I have to stop myself gazing lustfully at them in the supermarket. If I am not allowed to have them because of the bacteria is it alright if I cook it? Would that be enough to kill off the bacteria in them?

the babycentre guide says to avoid them even if made from pasteurised milk due to them being more moist and acidic making them a perfect environment for listeria bacteria to grow

Yes any cheese is fine cooked, as long as they get properly hot all the way through (hot enough to kill bacteria). Gently warmed, like in a chevre salad, isn't going to be hot enough, but fondue would be fine.

No it's not fine to eat all cheese made from pasteurised milk. Mould rinded cheeses (like brie and camembert and chevre) can grow listeria during the ripening process even if they were originally made with pasteurised milk.

There was a longish thread on brie earlier this week. basic conclusions were:

  • cooked is fine
  • official guidelines is uncooked is not ok, pasteurised or not
  • lots of people are eating it anyway as they've concluded that the risk is sufficiently low, but that's clearly a personal choice depending on what you're comfortable with

PROPERLY baked yes, toasted in a panini or fast heated on a pizza, no (unfortunately)

made from pasturised milk doesn't do it I'm afraid

I scoffed Brie through 3 pregnancies. I never knew until after it was a no no
Oh well kids seem fine.
