Baked Brie?

Yesterday while shopping, I was salivating at the Brie in the cheese counter and thought about buying some and baking it. It should be ok if it is baked, right?
I usually put sun dried tomatoes and garlic on it, but I can't get sun dried tomatoes here - does anyone else have a baked brie recipe they love? I am dying for some!

As long as it's properly baked so it's cooked all through it's fine. I asked for one of those fancy Brie baking dishes for christmas!
Slivers of garlic and rosemary are nice too, plus you can open it up before baking and add a splash of White wine, yum.

You can get pasturised brie now. I got some in Sainsbury's when I was pregnant and ate most of it after dad (doctor) and friend (doctor and mummy) said as long as it was pasturised you can eat it baked or not :) That was a very happy day!

I live in Egypt, so I doubt they have pasteurized Brie here, but I will be buying some when I go the England at Xmas! Thanks for letting me know about it!

Sorry to put a dampener on things, but pasteurisation isn't considered the key factor in whether a cheese is safe to eat or not anymore - cheeses like brie, camembert and chèvre (which are soft and squiggly and mould ripened) have a low salt/high moisture content that makes a very good medium for bacterial growth. Any listeria bacteria that manage to get into the cheese post-pasteurization will find somewhere they are likely to proliferate and make a nice culture.

Hard cheese is much safer (whether the milk was pasteurised or not) as the salt/moisture balance is swung the other way, so even if a listeria bacteria comes into contact with an immature cheese its not going to make much headway on colonising it.

But ANY cheese is fine if well cooked. And baked brie is lovely :)

Yes yes yes, all cheese is fine if baked. Camembert, in the oven, all runny, with carrot sticks dunked in and crisps . So says the Food Standards Agency website, and I trust them! Ate that in France in my last pg, absolutely fine, told the mw (when she was asking if I managed with the food and my sickness on our hol) and she was horrified [hm]. Mis-informed of course, unless she knows more than the FSA!

My god I had baked brie in pastry at a restaurant last night with a Cranberry chutney .... Bloody delicious!

Im a big fan of baked Camembert, so delicious, really want some now!

Anyone know how to make mozzarella sticks? Mmmmmmmm cheese!

Marks and Spencer do lovely little breaded camemberts to bake as a starter if you're feeling desperate and too lazy to do it properly. I am also slightly afraid that if I baked a whole brie or camembert, I'd wolf the entire thing. I've bought the Tesco version now but not tried them yet. I've also made homemade pizza and put salami and chevre on, thus scoring two forbidden foodstuffs in one mouthful. Hot stuff is the way forward!

But cheese always goes down well at a party and there are lots of them happening right now. Then you can stand next to it and eat it all and not feel guilty.

When I get back to england I am going to M&S for sure! I love baked Camembert.

I had baked camembert last week with breadsticks and crudites to dip in it. You just the slice the rind on top off, stick in a few slivers of garlic and put some fresh herbs (I did rosemary and thyme) on top, drizzle with a bit of olive oil then do it for 15 mins at 200 in the oven (put it back in the lower half of the wooden box).

I did freak out a bit afterwards that I might not have killed all the bacteria but I was being daft. Baby is fine and wriggly.
