MAVETAS YOGHURT CAKE - YUM!

I make a yoghurt cake which is the easiest cake in the world to make - no weighing at all (yay!).

1 lemon yoghurt
1 yoghurt pot of veg oil (I know it sounds gross but just do it)
2 y.p of sugar (or less if you want)
3 y.p of plain flour
3 eggs
1.5 teaspoons baking powder

Tip yoghurt into bowl. Add oil and stir in. Add sugar and stir in. Add flour and egg alternately, bung in baking powder, pour into greased and floured bundt tin and bake at 180 for 40mins.

For the icing mix icing sugar with juice of a lemon to whatever consistency you like (the thicker the better!) and pour over. For added touch sprinkle flaked almonds all over.

LIATHS MARMALADE & BEER CAKE RECIPE - YUM!

Did someone want my cake recipe?

Marmalade & beer cake recipe - this makes enough for 2 loaf tins

180g unsalted butter
300g golden syrup
480g self raising flour
6 tsp ground ginger
4 tsp ground cinnamon or mixed spice
2 large eggs, beaten
1 jar chunky marmalade
1 bottle beer (275ml is perfect)

Melt butter with golden syrup.
Mix all the ingredients together in a bowl (or food processor), bake in greased loaf tins at 180 degrees for about an hour.

ECA'S CARROT CAKE - YUM!

175g dark brown soft sugar, sifted
2 large eggs
120ml sunflower oil
200g wholemeal self raising flour
1 1/2 tsp bicarb of soda
3 tsp mixed spice
grated zest of 1 orange
200g carrots peeled and grated
175g sultanas

for syrup glaze:
juice 1/2 orange
1 dessert sp lemon juice
40g dark brown soft sugar

icing:
butter (at room temp), soft cheese (philadelphia type stuff), icing sugar, water to make smooth

Square baking tin about 25cmx15cmx2.5cm, greased and lined.

Oven at gas mk 3, 325F, 170C

1 Whisk sugar, eggs and oil for about 3mins.
2 Sift in flour, bicarb, mixed spice & tip in all the bits of bran left in the sieve.
3 Gently stir together then fold in orange zest, carrots and sultanas.
4 Pour in tin and bake on centre shelf of oven for about 35-40mins
5 When cake comes out of oven stab with a skewer all over and spoon syrup glaze on.
6 Leave cake to cool in tin
7 Mix butter, icing sugar, soft cheese to make icing. I use a bit of water to make it smooth if it's not mixing well. Use whatever quantities you prefer (i.e. more icing sugar make a sweeter one, more cheese makes it more savoury, more butter makes it more like regular buttercream)

MAMMYJO'S CHOC CHIP MUFFIN - YUM!

I have a nice choc chip muffin recipe which is delicious so here it is..........

275g plain flour
1 tbsp baking powder
115g caster sugar
1 egg
250mls buttermilk
60mls sunflower oil
1 pack of choc chips or 150g raspberries (or half and half!)

Mix flour, baking powder and sugar in a bowl.
In a separate bowl, mix egg, buttermilk and sunflower oil.
Pour wet mixture into dry ingredients and mix quickly together.
Add choc chips or raspberries.
Spoon mixture into 12 muffin cases and bake for 15 - 20 minutes at 200 degrees. YUM!!

Oooggs choc cherry trifle

1 bar choc cake
few splashes of kirsh/cherry brandy
1 tin of custard
punnet of fresh cherries stoned or tin of
carton of double cream
two cadury flakes

cut up cake and put in botton of casserole dish
drizzle kirsh over and chuck in cherries
pour over custard
whip up double cream and spoon over custard
crumble flake on top

very yummy - have just had some

can also do with ginger cake, cider & pears!!

Sounds yummy Oooggs.

Definitely one to try and sounds like a good recipe for xmas time??

Am thinking of storing all these recipes up and having one big bake out!

would have to be summer if you were using fresh cherries as they are in season now!!!!!

We had it last week

Very low fat turkey burgers (weight watchers recipe)

1lb turkey mince
4 spring onions finely chopped
jar of cranberry sauce
1 egg beaten
2 slices of wholemeal bread into breadcrumbs

mix all together divide into 8 and grill or oven cook on gas 6.

they kids will love them as well as they are sweet.

having these tomorrow

PINIONS STIR FRY WITH SWEET SOY AND SPRING ONION

Thought I'd add one of my own:

Packet pork, either cubed or 2 small chops and slice into thin strips
2 bunches spring onion
One packet amoy sweet soy and spring onion stir fry sauce
Packet Mange tout
8 Shallots
2 Pak choi

Serve with rice.

(Tip by two packets of sauce, keep half "mixture" for the following day and make huge risotto. Add pan of rice. Add small pan of small frozen veg. Add packet sauce. Soy sauce, salt, sauce. Stir. Delicious and made in about 10 mins).

So: Chop all veg. Stir fry pork. Add veg. Add sauce.

Yummy!

Well then, as I'm bored, might as well add my recipes!

NORMA'S STIR FRY SAUCE

1 chicken stock cube (make as per instructions on packet)
1 tbsp cornflour
1 tbsp soft brown sugar
1 tbsp soy sauce

Add to stir fry when and heat through.

NORMA'S TOFFEE CORNFLAKE CAKES

1.5oz Marg
3-4 tbsp golden syrup
1 tbsp cocoa powder

Heat in pan till melted allow to boil for a min then take off heat and add cornflakes!!! Put into cake cases.

MARS BAR CAKE

3oz Rice crispies
3oz Marg
2 mars bars (use 3 supermarket own brand if you want it to set better)
220g choc

Melt marg & mars in pan, remove from heat and add crispies. Press into a tin and allow to cool a little. Melt choch and spread over. Allow to set.

MR BUTTY'S TANGY CHICKEN

2 chicken breasts (diced)
1 onion (chopped)
1/2 red pepper (diced)
2 tbsp oil
2 tsp curry powder
1 tbsp flour
1 chicken stock cube
1 tbsp lemon juice
1 eating apple (diced)
1oz raisins (optional)
1oz mango chutney (optional)

Put oil, onion and curry powder into saucepan, fry for 2-3 mins. Add chicken and fry for 5 mins (til chicken turns white). Remove from heat and stir in flour, 1/2 pint of water, stock cube and lemon juice. Return to heat and bring to boil (stirring regularly). Stir in pepper, apple, raisins & mango chutney. Cover saucepan with a lid and simmer for 20-25 mins. Serve with boiled rice & a little natural yoghurt.

Swedish apple cake (aka "Labour Cake"!!)

2 apples - grated
100g butter
225 light muscovado sugar
2 eggs (beaten)
225 SR flour
1 tsp ground cinnamon
quarter tsp ground cloves
(I just tend to use a tsp all spice TBH)

Needs 20cm round cake tin.

Cream butter & sugar then add eggs a little at a time.
fold in flour, spices and apple.
Bake for between an hour and hour and a quarter at 180 degrees. Nice with toasted almonds spinkled on top before baking.

Low fat chocolate muffins

1 tbsp cocoa powder
100g SR flour
half tsp bicarbonate of soda
50g caster sugar
100ml skimmed milk
1 egg
2 tbsp sunflower oil

Put dry ingredients into bowl - make well in centre. Beat together milk, egg and oil and add to bowl and stir together.

Cook for around 15 minutes at 170 degrees

The best cupcake recipe ever!!

These are delicious and freeze really well.

150ml pot natural yoghurt
3 eggs, beaten
1 tsp vanilla extract
175g caster sugar
140g SR flour
1 tsp baking powder
100g ground almonds
175g unsalted butter (melted)

Mix yoghurt, eggs & vanilla extract together. Add to dry ingedients then add melted butter, mix together and spoon into muffin cases (makes 12).

Bake at 180 degrees for 18-20 minutes.

MAVETA'S MALLORCAN TANTALISING TORTILLA

dice potato (4 medium?)
dice onion (1 medium?)
fry until done and lightly golden on the outside (though not as golden as chips). Drain well.
Wipe out the pan with kitchen roll, or use a clean pan, whatever, probably about the size of a side plate or a bit bigger.
Add a little bit of olive oil and put on LOW heat. Tip back in all the potato and onion and pour beaten eggs on the top (approx 6). Don´t forget to add some salt to your eggs before you pour them on.
Let it cook on low, do NOT be tempted to turn up the heat.. leave it until the egg looks almost cooked on top, maybe a weeeee bit runny but hardly at all. Whack a plate on top (ideally a flat one that fits inside the pan and lies flat on top of the tortilla). Turn the tortilla on to the plate and slide it back into the pan on the raw side. Give it a few more minutes and VOILA!

These measurements are for the small frying pan I have but its kind of a case of trial and error as to how much potato and onion will give you good sized tortilla. The eggs should just cover the mix so if in doubt add e.g. 4 and then add the other 2 if needed. Or if you´ve put tons of egg in increase the other ingredients.

It´s very easy but you have to be patient, if you try to tip it when too runny it will all collapse. WIll still be yummy though! Oh - a non-stick pan is essential, heavy based even better..

Vegetarian Lasagne (honestly, better than the meat version - even DH thinks so!!)

1 onion, chopped
3 or 4 cloves garlic, crushed
2 cans tomatoes
Splosh of red wine
2 small handful puy lentils
3 tomatoes & 1 courgette, thinly sliced
White/cheesy sauce & lasagne sheets

Fry onion, add garlic then tomatoes, wine and lentils. Season and cook for about half an hour.

Layer lasagne sheets with the tomato ragu, white sauce and the sliced tomato and courgette. Top with grated cheese and bake for 40 minutes at 200 degrees.

You can vary the veg - sliced mushroom is nice too. The puy lentils give a really nice texture. I also use them to do a veggie cottage pie topped with mashed sweet potato - yummy!
