I know it's a bit late, but seder question

Okay, I swear that every year there's a bit in the Seder where you eat the egg with the saltwater, and inevitably think "this is really tasty, I should do it more often". This year, had two different haggadahs (we're trying them out, see which the crowds prefer) ... and neither had the egg bit. Was this removed, and why was I not told?

I don't remember an egg in salt water being a specific part of the seder.

We do parsley in salt water to symbolise the slaves tears (? I think).

Isn't egg in salt water an ashkenazi dish?

we always suffer through the egg in saltwater - agree re Ashkenazi thing

we dip parsley in salt water at the start and have the egg in saltwater before the meal

eggs are used in the mourners meal
(after a burial) so always assumed it had that sort of significance

had a look at Evelyn Rose. She says it is Ashkenazi, it is only eaten at Pesach but is part of the meal rather than seder itself.
