My pets toileting habits are driving me mad

Can anyone please suggest how to resolve this.

In the mornings, I spend 20-30 mins sitting outside so our dog can do his business. Sometimes he's good. Other times, he won't go and instead, waits for me to start work (WFH in an office nook) and then pees and poops in the main living areas. To make matters worse, he likes to eat his poop and he will take pieces onto the couch and make an awful mess. He's been desexed and is 18 months old. Sometimes he'll go a few days with no accidents inside but lately he's out of control. I can forgive this when the back door is shut but most of the time, it's open for him.
I'm at wits end and don't know how to stop this behaviour. Any ideas?

Wow. I forgot how judgy people are without knowing anything. Thank you to those who suggested I walk him in the morning. I have had dogs my whole life and they've always been happy to use their backyard. It never occurred to me that it might help.
For everyone's information.
I WFH 8 hrs a day. I have 4 teenagers who constantly interact with him throughout the day. He gets a short walk at lunch time and a longer walk in the afternoon. Sometimes this includes a stop at the dog park and bi weekly visits to my mum's where he plays with her dog. He is loved and well cared for.

I don't doubt it but whatever you are doing it is not working for this dog
Is there a reason nobody can walk him in the morning?

And?

One of the teenagers could walk him.

Many of us have stressful, busy, jobs and young children as well. Yet we still walk our dogs every morning.

If you have 20 minutes to sit in your garden, you have 20 minutes to walk the dog - don't you?

I find enzymatic cleaner really helpful for indoor 'accidents'. If my girl is a tad reluctant to 'go' we pop her lead on and walk down our front path. Works every time.

The current system isn’t working so you or a teenager needs to take him for a short walk before work/school. Our dog poos within 15 minutes on a walk in the morning & your dog should soon get into a good routine.

Mine go out first thing in the morning. I don't linger outside, because I'd be a distraction for them. If I do, they bring toys for me to throw.

My youngest dog has to eat outside, as her metabolism is so fast that she can eat and do her business in the space of about five minutes. It was the only way that I could stop her from pooing indoors. I can't say that I've ever had one that eats their poo, though!

When they were very small, they'd be sent outside every 30 minutes, gradually extending to longer periods of time once they became more house-trained.

Walking is also supposed to help with encouraging them to poo, but I understand that more frequent walks might not be possible if everyone is at work or school during the day.

Take your coffee or whatever it is you're having whilst you're sitting out in the garden with him and go for a short walk.
dogs that go inside just don't realise the toilet isn't inside. He's just 'happening' to go outside because he's outside when he needs it. When he needs it the rest of the time he just goes in his inside toilet.

You have to completely prevent it happening. Take him for a walk, take him for short walks multiple times a day and don't let him have access to anywhere where he has previously toileted inside until you've had no accidents for 4 weeks.

i realise it's annoying but you've got to work with the dog you have and the dog you have isn't getting it. I'm afraid that's your job to fix not his.
