If he only does it in the kitchen then it appears that he thinks it is OK to do it in there. How long do you leave him in the kitchen without taking him out for a piddle. I always tell new owners to think about how long they can comfortably hold their bladders overnight and then consider the dog is made to hold it usually longer, regardless of how uncomfortable it become.
I think you need to go back to basics and that means being there to catch him when he goes. Then straight outside with him, wait till he goes and praise and treat him when he does the required action
. Some dogs catch on quick, others take awhile. But you really need to be there to catch him in the act. For now I would take him out every couple of hours during the night, as you would a puppy and praise and treat when he performs. I know its a bit of a nuisance but persistence should pay off. As coolmama said, I would also try crate training again, if it worked first time around.
Are you able to put him in another room at night? He is maybe viewing the kitchen as an extension to the garden, but understands that the rest of the house is a piddle-free zone.
Also take him to the vet to rule out any urinary problems that may cause him difficult holding his bladder.
Can I also point out that you should never withhold water from your dog, fresh water should always be available. Just make sure that you take him out last thing at night and first thing in the morning to relieve himself.
As for special products to deter him, I would save my money, gentle, consistent training usually works better.
