Santa = saint, as in Nicholas, right?

Santa Barbara, Santa Maria, Santa Monica = female

San Francisco, San Diego, San Fernando = Male

So why isn’t it San Claus, or a female Santa Christmas?

Although there is Santa Cruz which sounds like a masculine name.

Cruz is a Spanish girls' name so Santa Cruz makes sense

It's more likely that it comes from the Spanish for 'Holy Cross' and is not a saint at all. The Spanish for cross is a feminine noun hence La Cruz and Santa Cruz.

Isn't it from Sinterklaas, which is Dutch not Spanish?
