SPB - according to my Concise OED 'learned' is the past and past participle of 'learn' and so is 'learnt'. It says "chiefly Brit" for learnt.
'Learned' (pronounced learn-ed) means "having or characterized by much knowledge acquired by study".

Personally I would use learned only in the second example. If I wanted to say 'I learnt French at school' then I'd use learnt. But, according to my dictionary, either learned or learnt would be correct.

This isn't grammar, but it comes under the heading "Inappropriate dialogue". This example is from an Alastair Maclean novel.

"Must dash. Captain making his rounds and all that"

Who said it, though? Some English "silly-ass" type character who could be played by Leslie Phillips or Ronnie Corbett? No, I'm afraid you're wrong. It was said by a Cuban revolutionary who had just hi-jacked a ship and was holding the crew to ransom.

very inappropriate dialogue. I think that it either wasn't well researched or the author couldn't be bothered to make it sound realistic.
