So, my son is called Rufus, how would I punctuate .....it’s Rufus’s toy ? Is it Rufus’ or is it Rufus’s ??

It is Rufus' toy and it is Rufus's toy are both correct.
The former was accepted a while ago but I prefer the latter.

Both correct. Some prefer s‘s for consistency. Others s’ for neatness.

Whether it's correct or not, Rufus' doesn't look right to me.

I have a name that ends in s, and I prefer the s's approach. s' seems better for plural nouns. As previous poster said, it matches pronunciation:
Dog's and dogs' are pronounced the same, but Rufus and Rufus's are pronounced differently.

A newspaper style guide I read recently said that Jesus' would be acceptable, but for (e.g.) James it should be James's.

Both are correct and accepted. Certain publications - such as a newspaper - might have a style guide which prefers one or the other, but that doesn't mean it's more correct, it just means someone has decided which they prefer.
