Can I check my understanding of these words when written together?

First in this context is an adjective and time is a noun. If it were written Firsttime or First-time (which I know is wrong) what would the new contracted word be?

Give us an example of how you would use it as that will probably answer the question. For example, one usage I can think of is: "I'm a first-time poster on this forum" where first-time is an adjective.

[ First time eating Spanish.] Adjective then noun then Finite form verb? How would you interpret this sentence?

Well, I think it's not a "proper" sentence because it contains no main verb - it would have to be: "This is my first time eating Spanish".

I think "first time eating Spanish" is a noun phrase, with "time" as the head noun modified by the participle phrase "eating Spanish" and then by the adjective "first".
