Having ds's birthday party in the afternoon then inviting people over on the evening for a bbq and lots of drink, want to lay on a really nice spread, obviously burgers and hotdogs (for the kids) but what for the adults and also veggie stuff.

TIA

For veggies: Halloumi and vegetable skewers. Marinade peppers, mushrooms, halloumi in 3tbsp oil, 1tbsp ketchup, half tbsp white wine vinegar, 3 crushed garlic cloves and a pinch of sugar. Yummy! Also portobello mushrooms with red pesto are delish.

veggie skewers, withpeppers, red onion chunks, courgette, cherry tomatoes. You could also do a version with marinated chicken for the meaties.
I find kids especially love eating off sticks. Oven cook a load of baked spuds and finish them off on the BBQ. Also plenty of salad for veggies.
A really special treat is to slice some bananas lengthways, but not all the way through, stick a cadbury's flake in each one (u can get packs of the ice cream sized ones) and wrap in foil, then put on the BBQ

not too worried about puddings, my sister is making a trifle (which is to die for) and we are gonna make fruit kebabs and use our choc fountain.

Corn on the cob is great on a BBQ (boil briefly first). Kebabs, with onion, cherry tomatoes, bits of peppers, mushrooms and either meat (I like lamb) or marinaded (soy sauce, sherry, peanut butter, whatever you like) firm tofu for veggies - as it tends to break up you can make it frimer by freezing it and letting it defrost before using. I always do lots of differnt salads at BBQs too so everyone can fill up on them while waiting.

buy fresh burgers, put a knob of blue cheese in centre and roll into a ball and bung on bbq.

slice courgettes down the middle, stuff with goats cheese, walnuts, whatever you fancy really. brush in oil, wrap in foil and cook on embers for about 30 mins.

dh is famous for his 'spreads' so to speak! He does a mean Morocan leg of lamb. Starts it off in the oven, then finishes it on the barbie. Absolutely delish! Only bugger is, there's never any left for midnight snack when the bbqs over!! Would you like the recipe - its very easy?

wurlywurly · 19/04/2007 13:53

ooh yes please princesscc

Right, you need to bone a leg of lamb. Its easy, just slide a knife down between the bone and flesh. Don't worry if it looks a bit rough, its so good people won't care!
Now you need to mix together all of the following:
1/4 cup fresh chopped corriander
1/4 cup fresh chopped mint
1/4 cup olive oil
1/4 cup runny honey
2 cloves crushed garlic
2 teaspoon ground corriander
1 teaspoon grated ginger
1 teaspoon salt
1/2 teaspoon chilli powder
1/2 teaspoon black pepper

Put the lamb in a shallow dish and spread mixture all over, really work it in. Cook as you like, but remember there's no bone in it, so it won't take as long as usual.

Bon Apetite!

wurlywurly · 19/04/2007 14:09

do you think you could do it with lamb chops or cutlets??

Absolutely! We usually make a cous cous salad with feta cheese and olives and juice & zest of lemon to go with it. Mixed up with a bit of rocket or spinach. And warm pita bread pieces.

wurlywurly · 19/04/2007 15:57

ooh like the sound of the cous cous

Jamie Oliver has a recipe for a lovely Sunmmer Chickpea Salad which has always been popular at veggie BBqs round here

Summer Chickpea Salad
Serves 4

1 small red onion, peeled
1?2 fresh red chillies, deseeded
2 handfuls of ripe red or yellow tomatoes
2 lemons
extra virgin olive oil
sea salt and freshly ground black pepper
1 x 410g jar or tin of chickpeas, drained, or around 4 large handfuls of soaked and cooked chickpeas
a handful of fresh mint, chopped
a handful of fresh green or purple basil, finely ripped
200g/7oz feta cheese
Method
First of all, finely slice your red onion. Once that is done, finely slice your chillies then roughly chop your tomatoes, mixing them in with the onion and chillies. Scrape all of this, and the juice, into a bowl and dress with the juice of 1 and-a-half lemons and about 3 times as much good extra virgin olive oil. Season to taste.
Heat the chickpeas in a pan, then add 90 per cent of them to the bowl. Mush up the remaining chickpeas and add these as well, they will give a nice creamy consistency. Allow to marinate for a little while and serve at room temperature.
Just as you are ready to serve, give the salad a final dress with the fresh mint and basil. Taste one last time for seasoning, you may want to add the juice from your remaining lemon half at this point. Place on a nice serving dish and crumble over the feta cheese.

grilled haloumi is really v nice

Mercy · 19/04/2007 16:22

Hana, agree re halloumi!

We also do field mushrooms in foil; dot with butter and slivers of garlic and cook ner to coals near the end of the main cooking time.
