Keeping in touch days maternity leave

I am currently on maternity leave and my statutory maternity pay is due to end mid-April. I won’t be planning on returning to this job due to a multitude of reasons however I want to use this time wisely to have the best outcome financially.
do all companies offer keeping in touch days while on maternity leave or is it at the discretion of the company? Would I be able to say I only want to take these days on a weekend when I have childcare? Would I be able to take these days in the unpaid months of my maternity leave and still be able to hand my notice in after them?

It might be worth a chat with HR to ask if they are available and what the conditions would be. You can use them at any point and you will be paid for the hours worked.

I work in hospitality so yes they operate 7 days a week

I think you can work up to 10 KIT days (at anytime during paid or unpaid leave) if your employer agrees, but you're not entitled to it. The type of work and amount you're paid all has to be agreed beforehand with your employer. I expect you can ask to have a KIT day at the weekend but the company don't have to agree to it (just like they can't force you to take any KIT days if you don't want to). I'd just check with HR.
