Sensory trays

Hello
I've been really enjoying doing some sensory activities with my 5 month old. We've done some water play and bottles etc. I think he'd love to explore more textures like jelly, spaghetti, cheerio sand etc.
Do I need to wait until 6 months for this?
Also at what age do you Introduce non edible textures like gloop etc?
He's our first baby so I'm not sure on timelines 😂

Wait until baby isn't automatically putting everything in their mouth before using non edibles. And supervise them closely.

I would think letting them explore textures of food items would be ok before six months

I'd agree – at five months, you're fine to do food sensory play (but watch the sugar/salt levels, as it will go in his mouth), but everything needs to be taste-safe for a long time yet. Exactly when depends on the child, some are over the mouthing everything phase by 18 months, others it's more like 2.5 or 3.
