Toddler's limited diet making her constipated

My (2 year 9 month ) toddler started to become a fussy eater around 2 and as time goes on her eating is more and more restricted. She used to eat a wide range of veg but now will only eat baked beans. We have more success with fruit as she'll eat banana, pear, apple, melon or strawberries but she used to eat more. She happily survives on milk, yoghurt and toast. Understandably this is slowing down her bowel movements considerably! This evening she was screaming and crying trying to poo as it was so solid it was painful for her. I took her to the pharmacist last week who said she wouldn't be considered constipated as she is having bowel movements, they're just tricky and take her a long time- however it was horrid seeing her in pain and struggling and I don't want her to fear pooing. What can I do to help her?

Can't you just hide veg in things like cakes biscuits or whatever food she will eat?

What else will she eat?

Will she eat high fibre cereals? Pear or apple purée pouches with a good cereal might work.
Also consider her water intake. Is she drinking enough?

@llamajohn she's very suspicious of foods being different but she possibly would eat hidden veg in a cake/biscuit in a way she wouldn't hidden in a sauce as she wouldn't touch it! She eats tuna, roast duck, peanut butter, hummus, pasta, chips, mash, porridge (on and off), cheese and she loves prepackaged toddler snacks like kiddylicious or organix ones.

@Elliesmumma she does eat porridge sometimes I do sneak Ella's kitchen pouches into that. She used to eat weetabx too but sadly that seems to be out as well now 😖. She is very good with drinking water, she always has access to her bottle and we give her reminders frequently- her pee shows she is hydrated too

For a start, lactolose is can be bought OTC and just softens the stool so it's worth buying and trying as a way to make things a bit easier.

Will she drink smoothies? You can add a few oats, some flaxseeds, even a bit of spinach or cucumber to mixed berry/banana smoothies with very little effort and no noticeable impact on taste (be stingy).
