Slow cookers and alcohol

Hi all, apologies if this is the wrong place for post.
Just making a nice stew - requested by my Husband and wondering if I will be able to serve some to my 15mo.
Recipe requires 120ml of white wine and will be cooked in slow cooker for approx 7 hours.
I know alcohol generally cooks off with longer cooking times but I'm a bit thrown by the fact the slow cooker doesn't allow much evaporation?

I'm sure someone with more knowledge can elaborate but I'd say you'll be fine, for 7+ hours of cooking

That's 1.5 units or thereabouts in the entire portion so less than 0.5 I would say for a portion for 15 months? My 2 year old eats mince pies so I'm maybe a bit more lax 🤣

It requires heating to 78oC to boil off alcohol neat. The temperature will be different as it's in a cosolvent mixture - so a mixture of alcohol water and fats. This can change the evaporation temperature. The opposite of this will be seen across the country on the roads this morning where the addition of salt to water changes the freezing temperature from 0degC to -9oC

2h in the oven takes the alcohol to about 5-10% of the original amount and I Imagine you would be in this ballpark after 7h in a slow cooker. If it still has the taste of alcohol in the sauce at the end you could take a ladle or 2 of the liquor and put it on a hight heat on the hob to give it a bit of hand but this probably would be unnecessary

I'd start the process on the hob, heat to boiling to sear and burn off the alcohol then put into the SC.
