Fussy 3 year old with Coeliacs - any tips?

Hi there, my 3 year old is quite fussy. They are my first so maybe you will say it’s not so bad - I have nothing to compare it to really but it hardly eats ‘family meals’ majority of the time I have to make him something different (maybe that’s my problem is that I ‘facilitate’ The fussiness but I just can’t bear the thought of him being hungry. He’s become more fussy over the past 2 years. Was much more adventurous when he was younger. he’s been diagnosed with coeliacs 5 weeks ago and really keen to up his fish and meat intake.

things he’ll eat:

yoghurt but it has to be from a suckles pouch,
scrambled eggs with spinach
cheesy broccoli pasta
tomato pasta with Parmesan
plan bread (won’t eat sandwiches or bread that’s been buttered)
porridge
açai bowls (lol)
pain au chocoalte
crossaint
chips
pizza

wont eat fish fingers, chicken nuggets, burgers, sandwiches, lasagne etc

please help!

does anyone have any tips or how to slowly get him eating more things - like an actual method of some kind? I always place new things alongside stuff he likes so he doesn’t feel pressured and can try if he wants but he just avoids the new stuff.

also, how fussy would you say he is? Is it in the range of normal or is it quite extreme

feel like he’s not getting any protein a part from the eggs and dairy

It's a slow process but I had the policy of whole family meals no exceptions for my ultra fussy dd. Gradually through age 3 and 4 I managed to get foods into her diet, but she was a teen before the end of vegetable battle!

Ask for a referral to paediatric dietician - they should do this anyway as part of the coeliac diagnosis. They can help with both the gluten free diet and the fussy eating - be sure to mention it, though they will probably notice as you usually have to do a food diary to take with you when you attend appointments.
