is it obvious when, or just a slow unnoticeable transition?

I think it depends what you mean by spoil.

I went with the thought of no bad habits before 6 months. So I didn’t stress about routines etc until after that age. Although both mine were in a fairly good routine by 6 months.

I think about 6 months; before that it didn’t seem to matter what I did either my babies slept or they didn’t. By about 8 months I definitely felt that rocking them to sleep impacted night time sleep etc

According to my 23 year old she hadn't reached that stage yet.....(jk obviously)

I would say when they develop some understanding really

What do you mean by 'spoil' a baby? Showing them physical affection and warmth by giving them a cuddle and comfort when they need it? Then they never grow out of that stage.

I cuddled both my kids to sleep at night until they were a year old. They both slept through when they were weeks old so it didn't create any bad habits IMO. They're 10 and 8 now and we've just done bedtime story and big cuddles before bedtime.

Showing a child they are cared for and loved is not spoiling them.
