Looking for work after 6 years of caring for ASD son

Hi Ladies, I would really appreciate your opinions and advice on the subject of employment after a prolonged career break due to caring for a child with special needs.
I am a Mum of a boy with ASD and have spent these last 6 years being his main carer and therapist. My son was dx very early on and our early intervention program included ABA therapy and DIR Floortime therapy. I had to learn to provide both these therapies to my DS on a daily basis. Needless to say that I have never done a more difficult job in my life. I have been pushed to my limits and have grown as an individual over these last years. I am also very proud of what we have managed to achieve. My DS is now in Year 1 and is doing extremely well. However I am not sure how to explain all that in my Cover letter and CV. Moreover I am not sure if it is a good idea to actually include these details in my LinkedIn profile or CV in a first place.
I was working in an Engineering industry before and am afraid to spook potential employers.
I will be very grateful for your thoughts.

Hats off to you and best wishes on your new journey back into the workplace. Personally, I wouldn't put any of those details in a cover letter or CV, so any questions about my career break will be addressed in person or when I receive the initial call as it is likely to be a question anyway. I will include essentials including skills that I have - whether gained previously while working or transferrable skills gained during the past few years - and focus on demonstrating my competence to do the job that is advertised/I am applying for.

Thanks a lot for your message! I wonder if I should call it 'career break' or 'Full time parenting' or 'Maternity leave'... any thoughts?

I had about 6 months out of work after being made redundant last year (DS was 1 at the time so I wasn't in a hurry to find a job) and just put "break from paid employment due to personal circumstances". I put it on job apps/CV to explain the break and then explained further at interview.
