6 step milk ladder, any ideas?

Not sure where else to post this so putting it here for traffic! Apologies!

We have started the milk ladder with our DD under the advice of a dietician. We have been advised to start the iMAP 6 step ladder and work our way up.

DD has passed step 1 and can tolerate malted milk biscuits. She isn't a huge fan of them but can eat enough to pass the stage.
We have moved on to step 2 where I lovingly made the mini muffins for her and added in her favourite fruit.
She will not touch them. And to be fair I don't blame her! They're really not nice.
I tried scotch pancakes too and again, she has zero interest.
She is not a fan of cake like foods. Not a fan of the texture I think.

I have searched online and found so many conflicting stories about what can be given on the milk ladder that now I feel clueless.
Dietician is IMPOSSIBLE to contact. I've left messages, emails etc and nothing.

Anyone who has a CMPA child and completed or is in the process of completing the iMAP 6 step ladder, can you offer any suggestions for step 2 that is not cake based and stodgy!

We've been through the milk ladder ourselves, but luckily ours liked all things cake.

Would a savoury cheese scone work instead, or something like a brioche bun?

A step or two further down would be a cheese sauce or bechamel in something like a lasagne.

I dont think she would eat a scone again because of the texture.
I didnt realise brioche was on the list so could maybe try that toasted?
How much of it would she have to have do you know?
Shes been quite hard to wean as she has reflux too and we struggled alot so although she eats, she can be quite particular with everything.

I feel for you, its so tough.

We were doing the egg alongside the dairy ladder, and ended up with a very limited set of dinners. We've managed to come a long way since then, so it does get easier.

Depending on the brioche there will be milk and butter. I'd say work up from a quater slice etc, to potential a full one of the brioche rolls if there isn't any reaction.

I imagine doing both at the same time was pretty hard going! And so limiting!
The whole process is quite daunting to be honest.
While we had a fab phone consult with the dietician, they never followed through with any of the promised paperwork and instruction.
Ive literally found a milk ladder template online. But there are so many variations of it!
Some say at step 2 you can include anything baked for 30mins like mashed potato, lasagne etc?!
Trying to speak to the dietician is near impossible
I dont know if we have just been unlucky though.
