Lunch ideas that can be frozen and portable

Hi all

We are in the throws of weaning which is going really well! We’re doing a combo of spoon fed and finger foods. I do quite a bit of cooking and freezing for tea (dinner), but am struggling for ideas for things I can make and freeze ahead of time for lunch, other than soups.

I’m also looking for lunch ideas that are portable so I’m not chained to the house until after lunch!

French toast. Might be a bit advanced for babies new to weaning, but after a couple of months it can really be a hit

I used to make mini cheese and spinach muffins to freeze. Taken out in the morning they are defrosted by lunchtime.

If out for lunch I just took bits - mini rice cakes, bread sticks, cubes of cheese, chopped chicken, cucumber sticks, chopped fruit, yogurt etc.
Or just a jar/pouch

Mini omelettes with cheese. Make them in a muffin tin in silicon cases if you have them. I used to mix up the veg, peas, peppers, little bits of broccoli or salmon. You can always make a big one and cut up into slices, wrap and freeze.

Pancakes and waffles freeze well and are one of the less messy portable things, I've found.

Intend to just bring a sandwich a bits of whatever's in the fridge.

she’s not quite at sandwich stage yet, but that will certainly be the easy option down the road!

When ds was weaning I'd male a big pot of something (Caroline walker trust has great ideas just skip the puree) and freeze in ice cube trays then pop the ice cubes into a freezer bag - one cube was enough then as ds got bigger I upped to 2.

In terms of stuff to go out with we got on well with cous cous bites (www.slimmingeats.com/blog/cheesy-couscous-bites-with-tomato-dip ignore the bit that says slimming it's a good recipe ) and sweetcorn fritters or broccoli and cauliflower patties.

These sorts of things freeze super well and they're delicious. Make more than you plan to as I used to eat so many of them there'd be none left for DS Blush

If you look at the Instagram page what mummy makes, she has various ideas. DD really liked the carrot pancakes (egg, flour, milk, grated carrot and cheese) and they were easily transportable.
