No sugar muffin recipe

I’ve tried and failed to make two different muffin recipes for my 11 month old today.

The first called for 100g of coconut oil which left the muffins oily and soggy. The 2nd recipe was bland and soggy again, that one was yogurt. Both using blended oats.

I’ve googled to death and can’t seem to find any healthy baby muffin recipes that don’t require sugar or a tonne of sodium.

Can someone please help me with a recipe for some muffins/cupcakes using strawberries, blueberries and I think at this stage - good old flour!

I don't have a recipe but I remember making muffins for my son which used banana as the "substitute" for sugar. Obviously there is still sugar present though. Is this an option for you?

I would just make a normal cake mix
4oz of sugar
4oz of marg
4oz of sr flour
2 eggs.
You can add dried fruit or fresh fruit such as blueberries and raspberries. Fresh fruit does make them a bit soggy

The amount of sugar in this recipe isn’t high, it’s icing that tends to be the very sugary part of home baking

That recipe is enough for 12 old fashioned size buns.

I make these. They're not super exciting to eat (because no sugar!) but they come out all right. I often do it as a sort of muffin loaf, as well. If you lack banana I guess you could use blended strawberry?

Could you try to add less oil to make it less soggy? Could replace sugar with blended sultanas?

Just use a normal muffin recipe and put less/no sugar in it. That's what I did when baking for my young DC's. Works fine especially if you are adding fruit.

Joe Wicks has a recipe for Banana and Blueberry muffins. I mean they taste 'healthy' as opposed to sweet but I think that's what you are aiming for.

This might work for you they are a cake/soft cookie hybrid.
Homemade apple sauce as shop bought almost always has added sugar.
