Snack ideas for hangry fussy 11 yr old

Hi all,
I am running out of inspiration for my fussy 11 yr old who gets to the point of hanger and then is impossible to be around. I’m trying to explain the importance of fuelling your body and the link between his bad moods and not eating (it’s a hereditary condition due to lack of a liver enzyme)
I’m looking for ideas to widen his snack selection, easy food to boost his blood sugar but healthy ish.

Cheese strings, granola bars, veg/breadsticks and dips, cheese and crackers, toast, banana/apple with peanut butter, nuts, cold meats, crustless quiche, banana/oat pancakes (these are great to make a batch of and then keep in the fridge). What does he like?

Carrot sticks with hummus
(Pre-prepared) lentil stew bowl
Boiled egg and cucumber slices
Apple with nut butter
Rice cake with peanut butter
Potato salad (can add peas, carrot and mayo)
Dried fruit - dates, figs, prunes
Raw nuts, of the more interesting kind (not just peanuts and almonds) and grapes

Melon
Chopped fruit in yoghurt (plain might work best)
Graze box / make your own, nuts, seeds, fried fruit etc
Stick of cheese wrapped in ham, salami etc
Cherry tomatoes, cheese cubes and avocado
Nut butter on oatcakes

Crudites and hoummus
Apple slices and nut butter (apple slicer is a couple of £ from Ebay)
Protein bars
Chicken drumsticks
Babybel

Limit the refined sugar and carbs, up the protein and fats

Crackers, oatcakes, weetabix, bananas, hard boiled eggs, falafels, chicken drumsticks/slices, olives, nuts, toast, pepperami, cheese strings, cold roast potatoes (possibly a bit niche but my fussy dd loves them!)

Is it Gilbert's syndrome? I have it and get hangry. You seem to suddenly drop in blood sugars etc so need protein type snacks. I find cold boiled eggs are the best!

And for lunch every day I eat hummus. With rice cakes. It keeps things on an even keel.

At 11 can he not just grab a banana, make some toast or a sandwich?

Hi all, sorry I wrote that then went out. Thank you for your replies. He likes things kne day and not others which is why i need inspiration for new things.
I shoukd have said that these are things for him to take to school with him to eat before after school clubs or at break (they have quite a late lunch break at his new school) i’ve just been to aldi and stocked up on some bits.
He won’t eat bananas unfortunately, he used to but not now, they are always my go to snack!

Sandwich (with a simple plain filling like ham or jam)
or even
Plain crusty bread with a small slab of dark chocolate as a filler
Roll, bun, pretzel
Popcorn
Dry cereal (any kind that you can eat with your hands)
Pancakes

On the protein side how about
Pistachios
Cashews
Roasted chickpeas

I've made fritters with courgettes or bacon which are good cold.

In terms of veg how about raw sliced mushrooms. We love them.

Home made fruit roll-ups would make a nice sweet option.

Or something cold-rice-based like sushi or arancini rice balls.

Or meatloaf, cocktail sausages, scotch egg.

Teddy it’s called Gilberts syndrome, it’s to do with the billirubin levels in the liver, he gets to a point where he is so hungry you have to basically put food in his mouth as it makes him totally unreasonable, tears and everything!
