Meal ideas for 2 year old

I am guilty of giving my 2 year old too many carbs and am looking for new meal ideas. Half the time she has leftovers/what we're having, but the rest of the time I cook something simple -- looking for new ideas. Thanks!

Omelette, with whatever filling she'll eat, served with veg or beans and maybe a piece of bread if you want some carbs. Stir fry (lots of different veg with some fish/meat/quorn and whatever spices she likes) with small portion of noodles. Soup, include beans or lentils for protein, maybe do a big batch at the weekend and eat for lunch but if it's got some protein in it's really filling so great for dinner too.
My DD loves roast veg and it's quick to do, just put a piece of salmon/chicken/sausages in the oven with the veg, you can add potatoes or not, perhaps with sweet potato or squash instead. That might not be the best thing if you're just cooking for her though, although sometimes we do a big pan and then use the leftovers mixed with some cous cous for lunch for us all the next day.
Not really that much help as we usually all eat together so our two year old just has whatever we're having, on the odd occasion she eats separately it's often pasta with some sort of sauce as it's quick! We do tend to freeze little portions of leftovers for her to have at a later date, she sometimes has them for lunch at her childminder's as well as for dinner. Remember she does need carbs at most meals but if you focus on the protein/veg aspect you can give fewer carbs, so you can do pasta just put loads of veg with it, chicken/tuna/bacon/beans/lentils and plenty of sauce.

I'm a great fan of making a big batch of hidden veg sauce in the slow cooker and freezing it. I add it to pasta and mince/chicken or use it as a sauce/gravy with meat, pots and veg type dinners. My 2 like it on jacket spuds too with some cheese in top.
Nothing wrong with left overs either, you don't need to be making different meals for a two year old I don't think (bar allergies etc).
Omelettes are great, salmon or any fish really is easy and quick.

My nearly 2 yo loves veg soup - we had leek lentils carrots and tomatoes tonight blended really smooth. He wont eat a lot of veg whole but loves just about anything in soup.

Cheese sauce on veg works too Smile
