Healthy-ish things to eat in a hurry?

I'm looking after a 9 month old, and am stuck in a rut of eating ham sandwiches, nuts or crisps during the day. Any ideas for handy food for during the day? The baby is fed a LOT better than I feed myself!

Make a large vat of tomato sauce (containing onion, garlic, celery, carrot, basic as well as tomatoes) and freeze in small portions. You and DC can have tomato pasta for lunch. Cheap, healthy and sustaining.

Or make a risotto to share.

Or vegetable soup.

Jacket potatoe - all mashed up with a little cheese.

Sandwiches with finger food such as tomatoe and cucumber.

Home-made soup. You can get lots of recipes off theinternet and make a big batch to freeze.

I would stay clear of the crisp though - too much salt and fat for a 9 mth old. Try plain rice cakes or bread sticks instead.

Lots of diferent kinds of fruit for snacks - I cut up pear, apples and mix them with berries i.e. strawberry's, raspberrys etc.

Oh, thanks for replying Lucy, but I meant food for me! The baby gets cooked from scratch food without salt from the Annabel karmel books. The problem is I spend my time on that and then eat a lot less well myself, lol. Sorry, should have been clearer. Good ideas though!

I have a stash of multigrain bagels in the freezer which I can defrost in the toaster and am currently a bit hooked on them filled with wafer thin beef, horseradish and rocket; cream cheese & wafer thin ham or goat's cheese and sun-blush tomatoes. In fact, anything with sun-blush tomatoes. And the beauty of them all of the above is that they keep for ages in the fridge.
Also second the soup - you can always stock up on part bake bread in the freezer.
And, snack-wise, fruit, of course, but crumpets and tea cakes a winner this time of year,

I found the best way to save time was not to cook separately for me or baby; just to cook ordinary food without salt, and then add the salt to my portion. The baby could happily eat my mashed up spud and a banana or the same soup I was having.

Oatcakes with hummous, tzatziki, taramasalata, etc. Or chop a load of carrots and cucumber in the morning and use with dips whenever you feel like a snack.
